DETERMINATION OF SOME BIOACTIVE COMPONENTS IN HARDALIYE

Özet

Hardaliye is a fermented grape drink wich traditionally produced in the villages of Trakya Region. Grapes and grape derivatives are important sources of minerals and antioxidants such as polyphenols and anthocyanins with bioactive properties. In this study, total phenolic content, total flavonoid content and total monomeric anthocyanin levels were determined in hardaliye extracts in order to determine some important bioactive components in hardaliye. The total phenolic content of the extracts wich prepared using 100% ethanol and 80% ethanol (ethanol: water 80:20 v/v mL) as solvent, was found 1842,58 mg GA/ kg and 1622,31 mg GA/kg respectively. The total flavonoid content of the extracts wich prepared using 100% ethanol and 80% ethanol (ethanol: water 80:20 v/v mL) as solvent, was found 1420,48 mg kateşin/L and 1447,19 mg kateşin/L respectively. Total monomeric anthocyanin content of the extracts wich prepared using 100% ethanol and 80% ethanol (ethanol: water 80:20 v/v mL) as solvent, was found 39.53 mg cy-3-glc/L and 41.94 mg cy-3-glc/L respectively.
