In this study, the delicious peptide sequence and a different peptide derived from delicious peptide which thought to exhibit similar taste characteristics were synthesized by microwave-assisted solid phase peptide synthesis method (SPPS) and characterized by LC-MS. Subsequently, purification was carried out with the HPLC device and the molecular docking studies of peptides were performed for T1R1/T1R3 receptor. After that, breast cancer cells MCF-7 cell line is used for cytotoxicity studies. The results represent that peptide derived from delicious peptide and delicious peptide have similar umami taste and both peptides did not have a toxic effect on cells.
