Özet
In this study, whey protein and glucan-sucrase-based α-glucan (AP40) with a 1→3 branching structure were used to produce oleogels. Different concentrations of AP40 were used to obtain foam structures and oleogel systems with desirable rheological and microstructural properties. In the first stage of the study, whey protein-AP40 structures containing different concentrations (2–8%) of AP40 were produced. To investigate the effect of rheological properties on foam structure, the rheological and microstructural characteristics of these systems were evaluated. Steady shear flow and dynamic rheological properties of whey protein-AP40 structures were analyzed. The samples exhibited shear-thinning behavior, while viscosity and consistency coefficient values increased with increasing AP40 concentration. The dynamic rheological properties of the samples were evaluated using frequency sweep analysis. Frequency-sweep findings indicated that the structures exhibited solid-like behavior (G′ > G″). In the second stage of the study, foam structures were obtained by freeze-drying, and their general appearance was evaluated. The findings obtained from this study indicate that the whey protein–AP40 complex can be successfully utilized in foam-templated oleogel production.
